Honoring Betsy Frederick for her persistence and fortitude in sticking with downtown Saint Paul these many years, and declaring February 28, 2019 to be Betsy Frederick Day.

WHEREAS, Betsy Frederick has been the owner of Lowertown Foods for over 30 years; and
WHEREAS, Betsy arrived at 4:30 a.m. daily to make sure that she has the coffee and rolls ready for every customer beginning at 7 a.m.; and
WHEREAS, Betsy made it into work even during cold and snowy days; and
WHEREAS, Betsy allowed her shop to be a meeting place for many of the residents of Mears Park Place Apartments and for the general public to discuss issues of politics in the neighborhood, the city, state and federal government; and
WHEREAS, Betsy's customers knew they could expect cleanliness beyond code and an immaculate kitchen at all times; and
WHEREAS, Betsy began preparing her soups and main course early in the morning, so that food would always be ready by 10:30 a.m. for lunch; and
WHEREAS, Betsy would prepare two soups and sandwich ingredients daily to be fresh and ready for her customers; and
WHEREAS, the neighborhood knew they could trust Betsy to be dependable and be there when they arrived; and
WHEREAS, Betsy's soups had regular and loyal customers, her cabbage kielbasa was always complimented, and she was frequently asked, "How do you make this?" and "What is in this soup?"; and
WHEREAS, customers would travel across town for her egg salad sandwich; and
WHEREAS, Betsy, who is a public health nurse and worked for the Ramsey County nursing service, also provided valuable information to many of her customers; and
WHEREAS, Betsy has befriended many of her elder customers and provided them information in regards to their healthcare concerns and needs; now, therefore, be it
RESOLVED, that the City of Saint Paul offers its heartfelt gratitude to Betsy Frederick for her over 30 years of providing a needed service that has contributed greatly to the vitality and well-being ...
